Easy Thai Fried Rice
Thai fried rice is easy and simple to make. There are popular Thai fried rice recipes which include fried rice with prawns, fried rice with chicken, fried rice with pork, fried rice with seafood ( normally with squid and prawns), fried rice with pineapple and so on!
Delicious fried rice!
I prefer using Thai Jasmine rice for fried rice dishes. The rice is needed to be cooked in a certain amount level of water. This will give a beautiful texture for your fired rice dish. You can do it by simply fill water in your rice cooker approximately 1 – 1.5 centimeters above uncooked rice.
After the rice is cooked, leaving it aired-dry in room temperature for 5-10 minutes is recommended. This will prevent rice from being wet and sticky when fried. Besides using Thai jasmine rice, you may try jasmine brown rice for a healthier option.
Thai fried rice is a home style food that requires simple ingredients such as minced garlic, onion, tomato, your choice of meat which is normally chopped into small pieces, chopped spring onion and coriander leaves, (often) an egg and seasoning with either soy sauce or fish sauce and a bit of sugar.
Start with frying garlic until fragrant and fry your choice of meat until cooked (preferably sligtly brown) then vegetables and rice… Seasoning fried rice when all is cooked. Isn’t it simple and easy.....
I found adding slices of medium sized tomatoes when frying will enhance color and taste. But….be sure not to overcook tomatoes as the rice can be mushy.
However, I love eating healthy meals. A good healthy ratio to follow is 40% vegetables, 30% tofu instead of meat and approximately 30% of your chosen rice. Some suggested vegetables to use include snow and sweet peas, Chinese kales, green beans, bok choy, cabbage, spinach, baby yellow corn, carrot....
An Asian wok is the most suitable equipment for cooking all stir fry dishes. What makes your fried rice delicious is making sure you use medium to high heat when stir frying, of course all ingredients are needed to be precisely cooked but be careful not to overcook.
Thai fried rice is commonly served with chili in fish sauce (chopped fresh Thai chilies in fish sauce) called in Thai Prik Nam Pla and a wedge of lime!

Thai Fried Rice with Prawns
khao pad goong
Preparation: 20 minutes
Cook Time: 15 minutes
Prawns medium size remove the heads and tails then shell the prawns 200 g 200 g
Brown Jasmine rice cooked 2 portions
Garlic minced 1 tbsp
Egg beaten 2 wholes
Onion thinly sliced ½ cup
Tomato medium sized sliced 1 whole
Spring onion chopped 1 handful
Coriander leaves for garnishing
Vegetable oil 2 tbsp
Light soy sauce 1 ½ tbsp
Sugar ½ tsp
Black pepper 1 pinch
Let's get started!
How to prepare:
- Heat oil in a wok on medium to high heat.
- Fry garlic until fragrant then add prawns.
- When prawns are slightly cooked, remove to a clean plate.
- Add onion and tomatoes. Stir until slightly soft.
- Add rice and stir all well.
- Remove the rice to the side of the wok. Pour the beaten egg and fry until nearly cooked, and then use a spatchula to move rice over the egg and stir well.
- Seasoning with light soy sauce, a bit of sugar, and chicken stock.
- Add spring onion and remove from the heat.
- Serve prawns on top and sprinkle black pepper and coriander leaves.
